Preheat oven to 375°F. Place the salmon in a baking dish. In a small bowl, mix together the chopped garlic, Dijon mustard, and apricot jam. Drizzle olive oil generously over the salmon, then spread the garlic-mustard-jam mixture evenly on top. Season with herb salt and black pepper. Squeeze fresh lemon juice over the fish and lay the sprig of dill on top. Bake for 20–25 minutes, or until the salmon is cooked through and the glaze is golden. Serve warm or at room temperature.
